Discover Aguirrebeko, our most emblematic wine jewel! With its name inspired by the idyllic hamlet of Aguirrebekoa, this wine embodies the essence of txakoli. Our carefully crafted recipe combines 85% of the captivating Hondarrabi Zuri, an indigenous variety that brings freshness and vivacity, and 10% Riesling, which adds complexity and elegance. To complete this symphony of flavors, we add a 5% blend of Hondarrabi Zuri Zerratia and Munemahatsa, adding unique nuances, soft aromas and exquisite texture.
In our winery, we call it the hidden treasure of Aguirrebeko. By observing how the wine evolved in the tank without interference during the pandemic, we discovered a new path to uniqueness. LENTO LATIDO Txakoli is the fruit of a meticulous practice: letting the wine that was destined to become AGUIRREBEKO age in the tank for at least a year. It is in this prolonged resting process that it acquires its distinctive character.

It is precisely this exceptional quality what confers to this txakoli its exclusivity, since not every year we can produce this txakoli with Denomination of Origin Bizkaiko Txakolina.
At Bodega Berroja, every step is crucial in the creation of our most exclusive Txakoli. From the meticulous manual harvesting in boxes of 15 to 20 kg to the careful destemming, pressing and racking, keeping the temperature between 10o and 12o to preserve the quality.
Fermentation is carried out separately for each plot, followed by an exhaustive chemical and organoleptic analysis to select the best wine from the harvest.
We apply micro-oxygenation techniques to guarantee the long-term stability of the Txakoli. Once it has reached maturity in the stainless-steel tank, we proceed to bottling.
We recommend pairing it with red meats accompanied by Biscayan sauce to highlight its robust flavor, or with smoked meats and sausages for a contrast of delicate flavors. It is also excellent with blue fish or grilled meats, enhancing their freshness and complexity. For a more gourmet experience, try combining it with Idiazabal cheese or blue cheeses such as Cabrales and Roquefort. In addition, its freshness and acidity make it a perfect companion for fresh dishes such as ceviche and sushi.
As the glass approaches, delicate aromas of white fruit and citrus awaken the senses. On the palate, a great balance unfolds, where freshness and structure intertwine harmoniously.
