To complete this symphony of flavors, we add a 5% blend of Hondarrabi Zuri Zerratia and Munemahatsa, adding unique nuances, soft aromas and exquisite texture.
In our winery, we call it the hidden treasure of Aguirrebeko. By observing how the wine evolved in the tank without interference during the pandemic, we discovered a new path to uniqueness. LENTO LATIDO Txakoli is the fruit of a meticulous practice: letting the wine that was destined to become AGUIRREBEKO age in the tank for at least a year. It is in this prolonged resting process that it acquires its distinctive character.

We present you our most recent wine, an exciting novelty that saw the light of day for the first time in 2021. Made exclusively from the Hondarrabi Beltza variety, this wine is a treasure from our adjoining plots of Los Caminos and Arandia 3. These privileged soils receive continuous sunshine, giving the grapes optimum ripeness and distinctive character.
This wine represents the initial phase on the road to our Txakoli Beltza (Red), a process that patiently awaits the full maturation of the Hondarrabi Beltza.
In our winemaking process, each step is executed with precision and care to create our distinguished rossé wine. We begin with manual harvesting in 15 to 20 kg crates, carefully selecting the grapes at their optimum ripeness. The grapes are then destemmed to separate the berries from the bunch, ensuring the purity of the must.
Next, the must and skins undergo maceration for a few hours, allowing the skins to impart the characteristic pink color to the must. Once the desired color is achieved, the must is pressed and the must is extracted and transferred to a stainless steel tank to await fermentation and subsequent bottling.
Each bottle captures the essence of this meticulous process, offering a rosé wine of exceptional quality that delights the senses.
