Our carefully crafted recipe combines 85% of the captivating Hondarrabi Zuri, an indigenous variety that brings freshness and vivacity, and 10% Riesling, which adds complexity and elegance. To complete this symphony of flavors, we add a 5% blend of Hondarrabi Zuri Zerratia and Munemahatsa, adding unique nuances, soft aromas and exquisite texture.
In our winery, we call it the hidden treasure of Aguirrebeko. By observing how the wine evolved in the tank without interference during the pandemic, we discovered a new path to uniqueness. LENTO LATIDO Txakoli is the fruit of a meticulous practice: letting the wine that was destined to become AGUIRREBEKO age in the tank for at least a year. It is in this prolonged resting process that it acquires its distinctive character.

Every corner of the winery has been conceived to follow a linear flow, following the natural essence of winemaking. From grape reception to bottling and storage, each step is carried out with precision.
The winery blends perfectly into the surrounding landscape thanks to its sustainable construction. The visible facades are made of sandstone, which acts as insulation, and wood, which softens the incidence of the sun. These materials not only respect the environment, but also minimize the visual impact of the building.
Our exterior view areas have been designed with a commitment to sustainability, allowing the building to blend harmoniously with the surrounding landscape, using green curtains to reduce its visual impact. The same applies to the building called Txoza, built with recycled wood to maintain the natural beauty of the area without visually impacting visitors and hikers.

Our commitment to sustainability is reflected in the very architecture of our facilities. Sixty percent of the winery is underground, which maintains a constant temperature and reduces energy losses.
